Glossary Definition

Known scientifically as Botrytis cinerea, and also known commonly as Noble Rot. A mold or fungus that affects grapes in humid climates and causes the grapes to shrivel. Responsible for providing the intensely sweet, honey flavor in Beerenauslese wines.
