Savignola, whose name has Etruscan origins, was originally a Christian complex built around the first half of the seventeenth century. In 1780 the Fabbri family bought Savignola. Paolina Fabbri is took care of the estate during the two world wars and her name was combined with the original surname for the estate's new name.
Savignola Paolina annually produces about 35,000 bottles of: Chianti Classico vintage and Â"RiservaÂ", Â"Il GranaioÂ", which bears the appellation IGT (Indicazione Geografica Tipica) of Tuscany, a small quantity of extra-virgin olive oil and Â"Grappa di Chianti ClassicoÂ". It has been a member of the Â"Consorzio Chianti Classico Gallo NeroÂ" since November 1924.
The estate comprises an area of about 8 hectares, with vineyards occupying about 5.5 hectares. Mainly Sangiovese grapes are grown, but there are other red varieties as well, such as Colorino di Toscana, Merlot and Malvasia Nera. The grapes are carefully selected before and during harvest, which is still done manually, and vinification takes place at a controlled temperature in stainless steel tanks.
